As part of the ¡®I Love Sushi¡¯ event, a lecture about the history and preparation of this emblem of Japanese cuisine!
The term ¡®sushi¡¯ generally refers to nigiri, a bite-sized piece of vinegared rice topped with raw fish. However, this form only appeared Protected content ago. In the 1,800-year history of sushi, this evolution is therefore recent. Over time, many other forms of sushi have emerged throughout Japan, reflecting the diversity of regions, preservation techniques and local eating habits.
Ikuhiro Fukuda, a professor at Waseda University specialising in the study of Franco-Japanese food cultures, will trace the history of sushi and the cultural adaptations that have shaped this iconic dish.
